CHOCOLATE MAYONNAISE CAKE and HERSHEY'S PERFECTLY CHOCOLATE FROSTING


CHOCOLATE MAYONNAISE CAKE

Ingredients:
2 cups all-purpose flour
2/3 cup unsweetened cocoa powder
1-1/4 tsp. baking soda
1/4 tsp. baking powder
3 eggs
1-2/3 cups sugar
1 tsp. vanilla extract
1 cup Hellmann's® or Best Foods® Real Mayonnaise
1-1/3 cups water
Directions:
1. Preheat oven to 350°. Grease and lightly flour two 9-inch round cake pans*; set aside.
2. In medium bowl, combine flour, cocoa, baking soda and baking powder; set aside.
3. In large bowl, with electric mixer at high speed, beat eggs, sugar and vanilla for 3 minutes or until light and fluffy. Beat in Hellmann's® or Best Foods® Real Mayonnaise at low speed until blended. Alternately beat in flour mixture with water, beginning and ending with flour mixture. Pour into prepared pans.
4. Bake 30 minutes or until toothpick inserted in centers comes out clean. On wire racks, cool 10 minutes; remove from pans and cool completely. Frost, if desired, or sprinkle with confectioners sugar.
*Or, prepare cake mix as above in 13 x 9-inch baking pan and bake 40 minutes or until toothpick inserted in center comes out clean.
PERFECTLY CHOCOLATE" CHOCOLATE FROSTING
Ingredients:
1 stick (1/2 cup) butter or margarine
2/3 cup HERSHEY'S Cocoa
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract
Directions:
Melt butter. Stir in cocoa. Alternately add powdered sugar and milk, beating to spreading consistency. Add small amount additional milk, if needed. Stir in vanilla. About 2 cups frosting.
The Results:
The best chocolate cake. The mayo made the chocolate cake nice and moist and the frosting went perfectly with it. I put the frosting in the middle of the cake and some chopped up strawberries. On top of the cake after I frosted it I put toasted coconut. I just barely toasted it and stuff it on around the cake. You can really put whatever you want on the cake. It would have been good with just the frosting. I don't think you could really go wrong with this cake. YUMMY!

That cake looks good! Using mayonnaise in a chocolate cake sounds really interesting. I will have to try it.

I have the original Hershey's mayo chocolate cake receipe and it does not call for eggs cuz ther are eggs and oil in the mayo. I am down in Atenas Costa Rica and got stuck with my receipe but saw the eggs. I called my daugter and she said no additional eggs. What do the extra eggs do?? JM

Anonymous - I looked up other recipes for this cake and a lot do not have the eggs. I haven't tried it without the eggs. I think it made my cake fluffy. I got the recipe from Hellmans mayonnaise website.

Is this the same recipe that was printed on the side of Hershey's Cocoa cans back in the '80s? I've been looking everywhere for that recipe, and while this sounds familiar, I'm not sure.

This is legit! I have a dated 1984 best foods international magazine ad torn out and passed from my grandmother. I have won a bet with friends about this cake. Here is it simply, when you grow up on box cake you like it. This recipe is a from scratch box style cake. It's easy and always a winner! I have been a professional baker 15 years, I still come back to this recipe.
